  1. Preheat oven to 450 degrees. Spray baking sheet with nonstick spray. Group 4-5 scallops in four fillet-shaped portions on pan. Season with salt and pepper. Combine basting oil and panko in small bowl; top each scallop group with one-quarter of mixture.
  2. Bake, about 7 min, until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of scallops). Remove from oven; let rest 2 min.
