Salt-Encrusted Salmon


You'll Need

2 pieces 8 x 10-inch parchment paper


Preheat oven to 450 degrees.
  1. Combine flour, salt, and egg whites in medium bowl to form salt dough. (May need to sprinkle top of dough with a little pan-searing flour to make it tacky but not stick to fingers.) Cut in half. Coat each parchment sheet with nonstick cooking spray.
  2. Place half dough on one parchment sheet. Sprinkle with pan-searing flour. Top with other parchment sheet; flatten with rolling pin to 1/4"-1/2" thick and a bit longer than salmon. Remove dough from parchment; place on baking sheet. Flatten remaining dough a bit longer than salmon, reusing parchment.
  3. Season salmon with pepper; top with herbs. Place salmon on top of dough on baking sheet; cover with other sheet of dough. Crimp edges together; making sure dough is intact with no holes.
  4. Bake on center rack of oven 12-15 min; pull at 125 degrees internal temperature. Let rest 10 min.
  5. Go around dough edge with sharp knife; remove top crust. Remove salmon; scrape off excess salt dough. Serve salmon on large platter.
Chef Tips
Be sure to remove fish from salt shell after resting 10 min, because there is a chance that it could become overly salty if left in shell too long.
  • Serve with lemons on the side.
