Roasted Maple-Walnut Glazed Chicken



  1. Preheat oven to 450 degrees. Place chickens in roasting pan; season with salt and pepper. Place pan on center rack of oven; roast 15 min. Reduce heat to 350 degrees. Roast until internal temp is 165 degrees (about 1 hour, 15 min). Check by inserting thermometer halfway into thickest part of the inner thigh where the leg connects to the body (away from any bone). Transfer from oven to clean serving platter.
  2. Heat saute pan on MED; add walnuts. Stir, toasting until lightly brown, 3-4 min. (Watch carefully to prevent burning.)
  3. Melt margarine completely in pan. Remove from heat; stir in syrup. Pour over chicken; serve extra glaze on side.
