Roasted Cod & Butter Potato Casserole



  1. Preheat oven to 450 degrees. Toss potatoes and 1/3 cup basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet. 
  2. Roast, 35-40 min, until browned and crispy. Remove from oven, leave oven on. Top potatoes with cod fillets (skin side down). Mix capers, parsley and remaining basting oil in small bowl; spread over fillets. Season with salt and pepper.
  3. Roast on center rack until internal temp of fish reaches 130 degrees 12-15 min. Check by inserting thermometer halfway into thickest part of fish. Transfer to clean platter; let rest at least 2 min. Serve with fresh lemon wedges.
