Roast Beef Tenderloin



  1. Preheat oven to 450 degrees. Rub tenderloin with olive oil and cracked pepper blend. Mix garlic with herbes; rub into tenderloin.
  2. Place on rack in roasting pan and then on center rack of oven; sear 15 min. Reduce heat to 350 degrees. Roast about 15 min per lb until desired doneness (check internal temp by inserting thermometer halfway into thickest part of meat. Refer to temp chart for final cooking temps). Remove from oven; let rest 20-30 min before slicing.
