Rib Roast with Rosemary



Preheat oven to 450 degrees.
  1. Rub roast with basting oil; season with sea salt, pepper blend, and rosemary needles. Sear on center rack of oven 15 min; reduce heat to 350 degrees.
  2. Roast beef about 15-20 min per pound until desired doneness. Check internal temp by inserting thermometer halfway into thickest part of meat, away from bone. Remove from oven when desired internal temp is reached. (Refer to temp chart for final cooking temps.) Let rest 30 min uncovered, before carving.
  3. Whisk demi glace and mustard in medium saucepan; heat to boiling on MEDIUM. Keep warm while carving beef.
Chef Tips
To more easily carve the roast: Remove ribs from roast by holding onto end of each bone and cutting downward along edge of bone, releasing meat. Trim excess fat from roast, then carve.
