Pressure-Cooked Mediterranean Chicken Stew


You'll Need

Electric Pressure Cooker


  1. Add chopped tomatoes, chicken broth, Italian seasoning, salt, pepper, bay leaves, tomatoes, garlic, beans, mirepoix, and chicken to electric pressure cooker.
  2. Close and lock lid; set dial on lid to PRESSURE. Set pressure cooker timer for 25 min on HIGH.
  3. Release pressure using quick release method (carefully avoid steam); open lid. Discard bay leaves. Fold in kale; replace lid. Warm 5 min; stir. Season with salt and pepper. Garnish each serving with extra virgin olive oil and grated cheese.
