Chicken Breast with Asparagus



  1. Prepare Matzo Ball mix according to package directions. Chill while preparing remainder of recipe.
  2. Combine 1 cup broth, 1/3 cup wine, about 1 Tbsp shallots, salt and pepper in 10-inch skillet; heat on MED-HIGH until simmering. Add chicken breasts; simmer, covered, 15-20 min, until internal temperature reaches 165 degrees. Check by inserting digital thermometer into thickest part of chicken breast. Let stand in liquid while preparing vegetables.
  3. Blanch asparagus 2 min in large pot of boiling salted water. Add carrots; blanch 1 min longer. Drain, saving water for matzo balls. Transfer to bowl of ice water; drain and set aside.
  4. Melt 4 Tbsp margarine in 2-quart saucepan on MED. Add remaining shallots; cook and stir 2-3 min, until translucent.
  5. Add cake meal. Cook and stir 1-2 min. Add remaining 3 cups broth and wine. Heat to boiling. Reduce heat and simmer 15 min, stirring occasionally. Add dill; season with salt and pepper.
  6. Shape 15-16 matzo balls, using 1 Tbsp of mixture for each. Drop into boiling water (from blanched vegetables). Simmer 20 min; drain. Remove and keep warm.
  7. Melt remaining margarine in skillet. Add carrots and asparagus; toss to heat. Season with salt and pepper. Slice chicken; serve with asparagus, carrots, matzo balls and sauce.
