Penne Alfredo with Chicken & Peas



  1. Heat sauce on LOW in small saucepan, simmer, stirring occasionally. 
  2. Dust chicken with pan-searing flour; pat off excess. Heat olive oil in pan on MED-HIGH; add chicken. Turn over Sear 3-4 min until golden-brown.  Reduce heat to MED; cook 10-12 min, until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken).
  3. Add basting oil and butter and baste chicken 1-3 min. Transfer to clean platter; thinly slice. 
  4. Add pasta and peas to pot with warm sauce; gently toss. Divide evenly on 4 plates; top with sliced chicken. Sprinkle with shredded cheese; season with freshly ground black pepper.
