Pasta with Vodka Blush Sauce & Chicken



  1. Heat olive oil in large pan on MED-HIGH until oil faintly smokes; add chicken. Cook 3-4 min until chicken changes color one-quarter of way up and seared side has browned; turn over. Reduce heat to MED; cook, 6-8 min, until internal temp reaches 160 degrees (check by inserting thermometer halfway into thickest part of chicken).
  2. Add basting oil and butter to pan; swirl. Baste chicken with butter mixture using spoon, 4-5 min, until internal temp reaches 165 degrees. Transfer to cutting board; slice.
  3. Toss cooked pasta with warmed sauce. Divide evenly on 6 plates; top with sliced chicken. Sprinkle each serving with 1 tsp cheese.
