2 baking sheets


  1. Preheat oven to 400 degrees. Toss veggies in large bowl with basting oil; season with salt and pepper. Arrange in single layer on baking sheets.
  2. Roast on separate racks 12 min. Switch rack positions of pans for even roasting. Continue roasting 5-10 min or until cooked through. Remove from oven.
  3. Combine vegetables, pasta, basil pesto, reserved pasta water, and lemon zest in pan. Sprinkle each serving with shredded cheese and basil.
