Salmon with Asparagus & Leeks

  1. Trim leek roots and dark green ends; discard. Slice each leek in half lengthwise; cut crosswise into 4-inch pieces. Add to bowl of cold water; stir leeks to loosen any dirt. Remove with slotted spoon; drain. 
     
  2. Blanch leeks and asparagus 2-3 min in large pot of boiling; drain. Transfer to bowl of ice water; drain.
     
  3. Season fish with salt and pepper. Dust both sides of fish with pan-searing flour; pat off excess. Heat 1 Tbsp olive oil in large pan on MED-HIGH, until oil faintly smokes; add fish. Turn over when fish changes color one-quarter of way up and seared side has browned, about 3-4 min. Reduce heat to MED. Cook, about 4-5 min, until internal temp reaches 120 degrees (check by inserting thermometer halfway into thickest part of salmon).
     
  4. Add basting oil and butter to pan; swirl to combine. Spoon over salmon to baste, about 1-3 min, until internal temp reaches 130 degrees; remove from pan. Let rest 2 min. Wipe pan clean.
     
  5. Add asparagus, leeks, and remaining olive oil to pan; toss to combine. Season with salt and pepper. Cook until heated through, about 2-3 min. 
     
  6. Spoon about 2 Tbsp sauce onto plate; top with rice, veggies, fish, and remaining sauce.
