Organic Cajun Chicken with Black Bean Sauce


You'll Need

Braising pan


  1. Preheat oven to 350 degrees. Combine seasoning and sugar in large bowl; coat chicken with seasoning mixture. Set aside.
  2. Add black bean dip and broth to small bowl; whisk to combine. Set aside.
  3. Heat oil in braising pan on MED-HIGH until oil faintly smokes. Add chicken; turn over when color changes one quarter of way up and seared side has browned, 3-4 min. Place pan in oven; cook 12-15 min until internal temp of chicken reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken). Transfer chicken to clean platter; keep warm. Reserve drippings in pan.
  4. Add mushrooms, tomatoes, and red peppers to pan on MED. Cook, stirring, 5 min. Stir in black bean mixture; simmer, stirring constantly, 2-3 min. Slice chicken; transfer to serving platter. Top with black bean sauce.
