Lentil Stew



  1. Heat olive oil in large skillet on MED-LOW until oil faintly smokes. Add mirepoix; cook, stirring, 5-7 min, until soft but not browned.
  2. Add lentils; stir. Add broth; bring to simmer. Cook, simmering, 20-25 min, until liquid has been absorbed and lentils are tender. Add basting oil; season with salt and pepper.
