Kosher Braised Chuck Roast

Ingredients

Directions

  1. Preheat oven to 350 degrees. Season meat with salt and pepper; dust with about 4 Tbsp cake meal; pat off excess.
     
  2. Heat oil in large braising pan on MED-HIGH, until oil faintly smokes; add meat and brown on all sides, 5-8 min. Remove meat from pan; set aside. Discard all but 1 Tbsp oil.
     
  3. Reduce heat to MED. Add onion; cook, stirring, 3-4 min. Add fennel and garlic. Cook, stirring, about 5 min to brown slightly. Remove from pan, set aside. Add mushrooms to pan. Cook, stirring, 3-5 min, until soft but not browned.
     
  4. Add wine; cook, stirring to loosen browned bits on bottom of pan. Simmer about 5 min, reducing wine by half to syrupy consistency. Add tomatoes and bay leaves. Combine soup base with boiling water; add to tomato mixture. Return meat and vegetables to pan. Bring to simmer; cover.
     
  5. Braise on center rack of oven 2-2 1/2 hours, until meat is fork-tender.
     
  6. Remove pan from oven, carefully taking off lid to avoid steam. Remove bay leaves; transfer meat to platter. Let rest 10 min.
     
  7. Skim fat from sauce if needed. Whisk in remaining 3 Tbsp cake meal to thicken sauce; season with salt and pepper.
