You'll Need

Roasting pan


  1. Preheat oven to 450 degrees. Place chicken in center of roasting pan. Rub chicken with basting oil; season thoroughly with garlic-herb seasoning and rosemary.  
  2. Roast 15 min. Reduce heat to 350 degrees. Roast 1 hour 30 min, or until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken inner thigh).
  3. Transfer to clean serving platter. Let rest 15-20 min before carving. Squeeze lemon quarters over each portion before serving.
Chef Tips
Roasting in a shallow pan allows for even browning of chicken.
