Ingredients

Directions

  1. Soak noodles in cold water 2 hrs. 
     
  2. Add oil and garlic to sauté pan on MED; cook, stirring, about 4 min until browned. Transfer garlic to small bowl with slotted spoon; set aside. Reserve oil in pan. Add ground pork and fish sauce. Cook, stirring, about 3 min until browned and fully cooked. Set aside.
     
  3. Make crispy garlic sauce: Combine sugar, soy sauce, and rice vinegar in bowl; add half of sautéed garlic. Stir until sugar dissolves. Set aside.
     
  4. Add pork chop and eggs to large pot boiling, salted water; cook 9 min. Remove eggs; set aside. Cook pork about 1 min further until internal temp reaches 150 degrees (check by inserting thermometer halfway into thickest part of pork). Remove pork from water; rinse with cold water. Transfer pork to cutting board. Return water to boil; add shrimp. Cook 3-4 min until internal temp reaches 130 degrees. Remove shrimp (reserve cooking water); rinse with cold water. Drain; set aside. Thinly slice pork; set aside.
     
  5. Return water to boil. Drain noodles; add to stockpot. Cook 15 sec; drain. Transfer to large bowl; add remaining sautéed garlic and half of crispy garlic sauce. Toss to combine. Transfer to serving platter. Peel and quarter eggs; transfer to serving platter with noodles.
     
  6. Add shrimp, ground pork, sliced pork, lettuce, garlic chives, remaining crispy garlic sauce, and bean sprouts to large bowl; toss to combine. Arrange on top noodle mixture.
Chef Tips
 Quick soak noodles by soaking in hot tap water for 30 min, stirring once or twice.
