Gluten-Free Shrimp Salad



  1. Whisk together basting oil and lemon juice in small bowl; season with salt and pepper. Set aside 3 Tbsp for this recipe; use remainder for other uses (see chef tips).  
  2. Add tomatoes, 3 Tbsp of basting oil-lemon juice mixture, shallots, and shrimp to large bowl. Toss together gently. Chill 10 min.
  3. Add avocado; season with salt and pepper. Stir gently to combine.
  4. Portion lettuce on 4 serving plates; mound shrimp mixture on lettuce.  
Chef Tips
This basting oil-lemon vinaigrette makes a delicious, simple salad dressing or try it drizzled over steamed veggies or grilled seafood.
