Gluten-Free Salmon with Pesto



  1. Preheat oven to 350 degrees. Spread 2 Tbsp pesto on each salmon portion; top each with 2 Tbsp cheese and 1 Tbsp panko.
  2. Lightly coat bottom of baking pan with basting oil. Arrange salmon, pesto side up, in pan. Bake 18-20 min on lower rack of oven until internal temp reaches 130 degrees (check by inserting thermometer into thickest part of salmon). Let rest 2 min before serving.
