Gluten-Free Pasta Carbonara

Ingredients

  1. Heat olive oil in braising pan on MED; add bacon, pancetta, garlic and red pepper. Cook, stirring, 10 min, until softened, but not browned.
     
  2. Whisk eggs, black pepper and 1 cup pasta water; set aside.
     
  3. Add cooked pasta and 1/2 cup pasta water to pan; toss to coat with pan drippings. Add egg mixture, grated and shredded cheeses. Stir and toss to create creamy cheese sauce. (If needed, add up to 1/2 cup more pasta water.) Remove garlic cloves.
     
  4. Sprinkle pasta with parsley. Garnish with grated cheese and black pepper to taste.
