Gluten-Free Hatch Chile Mac & Cheese



  1. Preheat oven to 350. Add milk, butter, and baking mix to medium pan on HIGH. Bring to rapid boil, stirring often. 
  2. Reduce heat to MED; add muenster, stirring continuously until creamy. Add Cheddar; stir until creamy. Add Hatch chiles; stir.
  3. Add cooked pasta to cheese sauce; stir to coat. Spread evenly in 13x9 baking dish. Pour eggs evenly over pasta. Sprinkle top of pasta with crushed chips.
  4. Bake 25-30 min until eggs are set.
