Garlic & Herb-Rubbed Roasted Turkey


You'll Need

Large roasting pan with rack, digital thermometer


Two days before: Combine seasoning salt and sugar in small bowl.  Remove pop-up timer; loosen turkey skin at breast and drumstick. Using clean hands, rub 1/3 of mixture on turkey breast, 1/3 on legs and thighs and the remaining 1/3 inside turkey cavity. Place turkey in pan; cover with plastic wrap. Refrigerate 48 hours.

Day of roasting: 

  1. Preheat oven to 450 degrees. Place turkey, breast side up, on rack in shallow roasting pan, drizzle with basting oil. Tuck wings under back of turkey. Cover turkey loosely with a "tent" of aluminum foil.
  2. Roast 15 min. Reduce oven to 350 degrees and roast; see table below for approximate cooking times. Check internal temp by inserting digital thermometer into thickest part of inner thigh area where leg connects to body of bird - but not touching the bone. Baste turkey with drippings; roast until internal temp reaches 165 degrees. 
  3. Let turkey rest 30 min before carving to allow juices to stay in the meat.
