  1. Make roux: Melt butter in large stockpot on MED; add mirepoix. Increase heat to MED-HIGH. Cook, stirring occasionally, about 10 min, until mirepoix begins to soften. Add flour, stirring until well-combined. Reduce heat to MED. Cook, stirring often, 5 min, watching carefully that it doesn't burn. 
       
  2. Carefully add 2 cups broth to roux mixture; stir 1 min to make a smooth paste. Continue to add broth, 1 cup at a time, while whisking, until all broth is used and mixture is smooth. Continue to cook, stirring, until mixture comes to a full boil, about 5-6 min. Reduce heat to MED-LOW; slowly whisk in heavy cream. Season with salt and pepper.
     
  3. Add chicken; return to simmer. Cook 5 min. Stir in peas 10 min prior to serving.


Chef Tips
  • If a thicker consistency is desired, whisk together 1 tablespoon cornstarch and 1 tablespoon water. Add mixture to creamed chicken and vegetables; simmer 5 min.
