Cod & Veggie Spaghetti with Roasted Red Pepper Sauce



  1. Preheat oven to 450 degrees. Add veggie spaghetti and 1 Tbsp basting oil to large bowl; season with salt and pepper. Toss to combine. Arrange veggies evenly in bottom of baking dish.
  2. Season cod with salt and pepper; drizzle with remaining basting oil. Place fillets on top of veggies in pan.
  3. Bake about 20 min, until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of cod), and veggies are tender. Remove from oven; let rest 2 min. Serve with warmed red pepper sauce.
