You'll Need



  1. Top each chicken breast with 1/4 of the sage and 1 slice prosciutto. Place chicken between triple thickness of plastic wrap; flatten with meat mallet to a uniform 1/4-inch thickness. Remove from plastic. Dust with pan-searing flour; pat off excess.
  2. Heat oil in large skillet on MED-HIGH until oil begins to faintly smoke; add chicken. Turn over when chicken changes color one-quarter of way up from bottom and seared side has turned paper bag-brown, 3-4 min. Reduce heat to MED; cook chicken 6-9 min, until internal temp reaches 165 degrees (check by inserting thermometer halfway into chicken). Transfer chicken to platter; finish with sauce.
