Cashew Chicken

Directions

  1. Place chicken in small bowl. Add water, 1 Tbsp at a time, working in with hands until water is absorbed. Drizzle 1 Tbsp oil over chicken and work in with hands until absorbed. Sprinkle chicken with cornstarch; work in with hands until absorbed. Cover; chill 30 min.
     
  2. Heat 1 Tbsp oil in stir-fry pan on HIGH; add half the chicken. Sear meat on one side until browned, about 3 min. Sear other side. Transfer to clean dish. Wipe wok. Add 1 Tbsp oil to wok on HIGH; repeat with remaining chicken. Remove chicken from wok; set aside (do not wipe out wok). 
      
  3. Add remaining oil to wok on LOW; add cashews. When cashews begin to brown, add garlic and ginger. Cook, stirring, on MED-LOW 3 min, without browning garlic. 
     
  4. Add sauce; increase heat to HIGH. When sauce begins to boil, return chicken to wok. Toss to coat. Cook, stirring, 1 min. Add green onions; stir to combine.
