Tilapia with Baby Spinach



  1. Preheat oven to BROIL. Toss spinach with oil; place in bottom of shallow-sided, oven-proof casserole dish. Spread tomatoes around spinach along edge of casserole.
  2. Add butter, shallots and thyme to pan. Melt and blend, but do not burn the butter. 
  3. Place tilapia on top of spinach; spread 1 Tbsp shallot and thyme butter mixture on each filet. Season with salt and pepper.
  4. Broil on center rack of oven 10-12 min until slightly browned and internal temp of tilapia reaches 130 degrees (check by inserting thermometer halfway into thickest part of fish).
