Bourguignonne-Style Tenderloin



Make This First


Preheat oven to 450 degrees.
  1. Rub beef with basting oil; season with salt and pepper. Sear on center rack of oven 15 min. Reduce heat to 350 degrees.
  2. Roast beef 15 min /lb until desired doneness. Check internal temp by inserting thermometer halfway into thickest part of meat. Remove pan from oven when desired temp is reached. (Refer to temp chart for final cooking temps.)
  3. Let rest, uncovered, 15 min before carving. Serve with Bourguignonne Sauce (see related recipe).
