Asian Cauliflower "Rice" Lettuce Wraps

Ingredients

  1. Add vegetable oil to stir-fry pan on HIGH. Add farro; cook, stirring, 3-4 min until browned. Add cauliflower and bok choy; cook, stirring, 1-2 min. Add ginger, garlic, and carrots; cook, stirring, 1 min.
     
  2. Add mirin, sesame oil, soy sauce, and green onions; stir to combine. Cook, stirring, 2-3 min. Season with salt.
     
  3. Arrange lettuce leaves on serving platter; divide farro mixture evenly on leaves. Garnish with chopped cashews; drizzle with Tom Tom Sauce.
Chef Tips
For an authentic flavor, top wraps with toasted rice powder. To make: toast 2 Tbsp dry jasmine rice in small pan on MED until lightly browned. Grind rice into fine powder.
