Zucchini Walnut Bread

Loaf pan 9x5-inches

Directions

  1. Preheat oven to 350. Spray pan with cooking spray; dust with 1 Tbsp flour. Tap excess flour from pan. Combine 1 1/2 cups flour, cinnamon, cloves, baking powder, baking soda, and salt in bowl. Set aside.
     
  2. Gently press as much liquid from zucchini as possible. Whisk oil, sugar, eggs, and vanilla in separate bowl; stir in zucchini. Add flour mixture; stir until combined. Fold in walnuts and raisins.
     
  3. Spoon into pan; spread evenly. Bake on center rack 70-75 min or until pick inserted in center comes out clean. Cool on wire rack 10 min; remove loaf from pan and cool completely.
