You'll Need

Food processor


  1. Preheat oven to 350 degrees. Prepare filling: blend tofu in food processor until smooth. Add coconut milk; blend until smooth.
  2. Add canned pumpkin, sugar, molasses, flour, and salt; blend until smooth.
  3. Add vanilla, cinnamon, ground cardamom, nutmeg, dry ginger, and cloves to food processor; blend until smooth.
  4. Pour contents into pie crust.
  5. Bake 1 hour 10 min (up to 1 hour, 20 min) until center of pie is well-set and looks firm.  
  6. Remove from oven; cool to room temp. Or, chill overnight uncovered (or lightly covered with wax paper).

  • Have leftover filling? Place in small ramekins and bake about 50 min.
