You'll Need

Blender, strainer


  1. Add berries, sugar, and orange juice to pan on MED-HIGH; bring to a boil, stirring occasionally. Cook, mashing occasionally, about 5 min, until berries are soft and broken down.
  2. Add rum. Using a chef's torch or matchless lighter, carefully set fire to mixture (just touch the flame lightly; mixture should catch fire immediately.) Let burn, stirring with long-handled, non-flammable spoon, until alcohol is consumed (fire will extinguish on its own.)  
  3. Add lime juice. Cool about 5 min. Carefully transfer mixture to blender; puree. Strain, pressing with back of spoon. Discard solids.
Chef Tips
We don't recommend a handheld blender for this recipe, as the berry juice can spatter and stain.
