Wild Mushroom, Spinach & Gruyere Egg Casserole



  1. Preheat oven to 350 degrees. Heat oil in sauté pan on MED-HIGH until oil faintly smokes. Add onions; cook, stirring, 2-3 min. Add mushrooms; cook, stirring, 5 min. Season to taste with salt and pepper. Add spinach; cook 1-2 min, just to wilt. Remove from heat.
  2. Spray 9x13 casserole dish with nonstick spray. Spread onion-spinach-mushroom mixture in casserole; top with 1 cup cheese.
  3. Beat eggs with milk in mixing bowl. Pour over vegetables and cheese; top with remaining cheese. Season with salt and pepper.
  4. Bake 35-40 min or until eggs are set and top is browned.
