Truffle & Gruyere Scrambled Eggs



  1. Gently break eggs into a bowl, keeping yolks intact. Heat nonstick pan on LOW. Melt butter with oil, coating pan; increase heat to MED-HIGH.
  2. When butter begins to bubble, add eggs to pan, keeping yolk intact. Reduce heat to MED-LOW. Cook 1-2 min, until egg whites begin to sizzle, like sunny-side-up eggs.  
  3. Add cheese to pan; remove from heat. Fold in cheese, breaking apart yolks. Return pan to heat; season with salt and pepper. Increase heat to MED-HIGH. Fold yolks and cheese, keeping mixture moist. Serve with a dollop of truffle spread and chopped parsley.
