Sweet Potato & Apple Hash



  1. Heat basting oil on HIGH in large saute pan until oil begins to faintly smoke. Add sweet potatoes in single layer; cook, turning occasionally, 3-4 min. Season with salt and pepper. Stir in onions; cook 1 min.
  2. Add apples; cook, turning occasionally, 3-4 min. Season with thyme; cook 1 min.

  • Serve with fried eggs over the hash.
  • To dice sweet potatoes easily, first trim off edges, forming potato into a rectangle. Slice, then stack slices, and cut in strips. Finally, cut across strips, making small cubes.
