Scrambled Eggs with Salmon



  1. Whisk together eggs and milk; season with salt and pepper. Stir in chives.
  2. Melt butter in medium skillet on MED-HIGH until bubbly. Add eggs and scramble.
  3. Wrap 1 slice smoked salmon around stems of each bunch of watercress. Drizzle watercress with olive oil. Garnish each serving of scrambled eggs with "bouquet" of salmon-wrapped watercress.
