Roasted Mango with Vanilla Yogurt



  1. Preheat oven to BROIL. Slice wide sides of unpeeled mango away from pit. Score flesh with knife in 1/2-inch cubes, gently invert to separate cubes.
  2. Place scored mango halves, skin-side down, in shallow casserole or on cookie sheet.
  3. Drizzle with olive oil; sprinkle with brown sugar. Season with pepper.
  4. Roast on upper rack of oven 3-5 min or until lightly brown. Top with yogurt; garnish with mint.
