  1. Gently break eggs into bowl, keeping yolks intact; set aside. Heat pan on LOW. Add butter and oil; melt together, swirling to coat pan. Increase heat to MED-HIGH, bringing butter to bubble.  
     
  2. Add bacon, chiles, and tomatoes; reduce heat to MED. Cook, stirring, 1 min. Add eggs to pan, keeping yolks intact. Reduce heat to MED-LOW. Cook, 1-2 min, until egg whites begin to sizzle. 
      
  3. Add cheese; remove pan from heat. Fold in cheese, breaking apart yolks. Return pan to heat; season with salt and pepper. Increase heat to MED-HIGH. Fold yolks and cheese, keeping mixture moist. Serve immediately.
