Carrot Muffins

Stand mixer with paddle, (2) 12-cup muffin pan, 18 baking cups

Directions

  1. Preheat oven to 350 degrees. Line two 12-cup muffin pans with 18 baking cups; set aside. Add 3/4 cup carrot puree, apple sauce, maple syrup, eggs, and chopped carrots to large bowl; stir to combine.
     
  2. Add almond flour, coconut flour, baking soda, baking powder, cinnamon, turmeric, and salt to stand mixer bowl; mix to combine. Add carrot puree mixture; mix on MED-LOW using paddle until combined, scraping sides of bowl. Add melted butter; mix to combine.
     
  3. Fill baking cups evenly with dough. Top center of each cup with about 1/2 tsp of remaining carrot puree. Bake 34-38 min until lightly browned. Remove from pans; let cool.
