You'll Need

4 (4" size) ramekins


  1. Preheat oven to 350 degrees. Butter bottom and inside of ramekin. Pour sugar into one ramekin. Rotate ramekin until all inside surfaces are coated with sugar. Pour remaining sugar into second ramekin and repeat, continuing until all are sugar-coated. Reserve excess sugar.
  2. Distribute fruit among ramekins.
  3. Combine pancake mix, water, and vanilla in small bowl. Spoon over fruit. Sprinkle with reserved sugar.
  4. Place ramekins on center rack of oven. Bake 25-30 min or until centers are firm and tops lightly browned.
  5. Mix mascarpone with maple syrup in small bowl. When cobblers are done, remove from oven; top each with a dollop of mascarpone.
Butter and sugar ramekins and mix mascarpone with maple syrup the night before. Refrigerate all items.
