Banana Walnut Crepes



  1. Heat nonstick skillet on MED; add crepes, one at a time, and warm 1 min each side. Remove to plate and keep warm.
  2. Cook, stirring walnuts in butter in same skillet for 2 min; stirring occasionally.
  3. Add rum and reduce for 3-4 min, stirring (allowing alcohol to burn off), being careful to avoid flare-ups.
  4. Add 1/2 cup maple syrup; heat to simmering and reduce 5 min. Add bananas and remaining syrup; simmer 3-4 min.
  5. Top crepes with bananas and syrup.
Substitution can be made for Meyers Rum by using additional 1/4 cup maple syrup in step 3. Continue with recipe.
