  1. Preheat oven to 350 degrees. Heat olive oil in sauté pan on MED-HIGH; add mushrooms. Season with salt and pepper. Cook, stirring constantly, 4-5 min. Set aside.
     
  2. Arrange shells on parchment paper-lined baking sheet. Add cream cheese and truffle spread to large bowl; mix well. Add cream cheese mixture to pastry bag; pipe evenly into shells. Top each with mushroom half, cap-side up. 
     
  3. Bake 10 min; transfer to serving platter. Garnish with chives.
