Directions

  1. Preheat oven to 450 degrees. Toss squash, shallots, and 1 Tbsp basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet.   
     
  2. Roast, about 20 min, until well-browned and soft; remove from oven. Reduce heat to 350 degrees. 
     
  3. Place squash mixture, goat cheese, and remaining 2 Tbsp basting oil in food processor; season to taste with salt and pepper. Process about 30 seconds until well-mixed but still slightly chunky. Add spinach and pulse lightly to combine; spinach should not be pureed.
     
  4. Spoon into ovenproof dish. Bake uncovered about 15 min or until heated through. Serve with baguette slices.
Chef Tips
Baguette slices may be toasted on a baking sheet at 350 degrees for 15-17 min.
