Grilled Artichokes & Shiitakes

Bamboo skewers (soak in water 1 hour), flat skewers if available

Directions

  1. Preheat grill on MED-HIGH 10 min. Combine lemon juice with cold water in large bowl; set aside.
     
  2. Peel off and discard tough outer leaves of artichokes until yellow-green leaves show. Using vegetable peeler, peel and discard tough outer skin from stems. Cut off and discard about 1/2 inch from tops of artichokes. Place artichokes in lemon water as each is trimmed to prevent browning.
     
  3. Combine about 3/4 of the lemon water in large saucepan with 1 Tbsp salt; bring to boil. Add artichokes; cover and blanch 6 min; drain. Add to large bowl of ice water; drain. Cut artichokes in half lengthwise.
     
  4. Alternate mushrooms (if preferred, cut larger ones in half) with artichokes on skewers, using 3 mushrooms and 2 artichokes on each. Brush with basting oil; season with salt and pepper.
     
  5. Arrange skewers on grill, close lid. Grill 5 min. Turn, brush with basting oil, and grill 5 min longer.
