Directions

  1. Add shucked cobs and water to stockpot. Simmer 30 min. Strain, discarding cobs. Set corn stock aside. 
     
  2. Heat oil in pan on MED. Add onions; cook 4-5 min, until softened. Add minced garlic; cook 1-2 min until softened. Stir in corn kernels and salt.
     
  3. Add enough reserved corn stock to cover kernels. Bring to a boil. Reduce heat to LOW; simmer 10-15 min, until tender. Strain corn mixture, separating and retaining both stock and kernels.
     
  4. Puree 2 cups kernels and 1 cup of stock in blender. Stir in remaining kernels.
