  1. Preheat oven to 350 degrees. Halve loaf horizontally. Spread eggplant evenly on each half; sprinkle each with 1 Tbsp of cheese. 
  2. Place halves cut-side up on baking sheet. Place in oven; bake, 20 min, until crisp.
