  1. Separate beets and juice, reserving juice. Cut beets in thin, match-like sticks.
     
  2. Add beets, reserved juice, sugar, and vinegar to small saucepan on LOW; warm, stirring, 3-5 min. Season with salt and pepper.

Use mandoline with large blade cutter for the beets.
