  1. Preheat oven to 350 degrees. Combine eggs, sweet potatoes, onion, matzo meal, and parsley in large bowl; season with salt and pepper. Shape into patties using 1/2 cup sweet potato mixture for each.
     
  2. Heat 3 Tbsp oil large nonstick pan on MED until oil faintly smokes. Place a few patties in pan; cook 3-4 min until brown on bottom. Brown second side, 2-3 min, adding more oil as needed.
     
  3. Remove patties from pan and place in single layer in parchment paper-lined baking pan. Repeat process with remaining mixture.
     
  4. Bake browned latkes 10-15 min.
Chef Tips
Because sweet potatoes have a high sugar content, these latkes will brown easily; watch carefully to avoid burning.
