  1. Preheat oven to 450 degrees. Cut small slice from both ends of tomatoes; cut each tomato in half. Hollow halves to create shallow cup. Stand tomato "cups" on end, hollow-side up, on baking sheet. Season with salt and pepper.
     
  2. Make filling: Combine bruschetta topping and spinach in small bowl. Evenly portion bruschetta mixture in tomato "cups" (about 1 Tbsp per "cup").
     
  3. Make topping: Combine panko, basting oil, salt, and pepper in small bowl. Add cheese, mixing well. Divide evenly onto tomato "cups" (about 1 tsp each cup).
       
  4. Cook about 15 min on center rack of oven, watching that topping does not become too browned.
Chef Tips
  • To quicken the process of slicing spinach, stack spinach leaves and slice. 
  • A melon baller works well for hollowing out tomato halves, or scoop out tomato seeds with teaspoon measure. 
  • Can be made a day ahead. Make filling and topping, chill up to 24 hours. Prepare tomato cups, fill and bake as directed.
