  1. Add yu choy stalks to stockpot of boiling, salted water on HIGH. Blanch stalks 1 1/2 min; add leaves to stockpot. Blanch 30 seconds.
  2. Remove yu choy from stockpot (reserve 1 Tbsp hot blanching water); drain well. Arrange leaves on platter; top with stalks. Top with red pepper, ginger, and green onions.
     
  3. Add reserved 1 Tbsp water to soy sauce; stir to blend. Drizzle around veggies on platter.
     
  4. Heat peanut and sesame oils on HIGH in wok until very hot. Spoon hot oil over veggies--it will sizzle as you pour it. Season with salt and pepper.

 

Chef Tips
  • Yu choy can be blanched ahead of time, then microwaved right before serving.
  • Entire recipe can be made ahead; does not have to be served hot.
  • To make green onion more fragrant, flat-pound it after its rinsed.
  • Add heat to this dish by drizzling with chili oil or adding in sliced fresno peppers.
